Peanut Butter Chocolate Cookies
These handy little snacks are a perfect option to prepare in several batches and keep in air-tight containers for those unpleasant afternoon sugar cravings.

Adding one banana to the recipe will hold the ingredients together (along with the peanut butter) and make the mixture perfectly smooth for shaping. However, this popular fruit is actually also a good source of fiber and antioxidants.
Furthermore, bananas are an excellent source of potassium, vitamin B6, vitamin C, magnesium, copper, and manganese.
The fiber called pectin in bananas helps lower blood sugar levels that naturally rises after heavy meals, reduces appetite, improves digestion and weight loss efforts.

- ¾ cup rolled oats
- ¾ cup peanut butter
- 1 large banana, chopped
- 1 tbsp raisins
- 1 tbsp dried cranberries
- ¼ cup dark chocolate (80% cocoa), chopped
Preheat the oven to 350 degrees. Line some parchment paper over a large baking sheet and set aside.
Place half of the oats in a food processor and process until completely minced. Remove from the food processor and transfer to a bowl. Add raisins, dried cranberries, and chopped dark chocolate (you can use chocolate chips instead). Mix all well and then add peanut butter and banana.
Mix well with your hands or a hand mixer fitted with a dough hook. You want a lightly sticky and well-incorporated batter.
Divide the mixture into 10 equal balls. Gently press down each ball to make a cookie shape. Place each cookie onto a baking sheet and optionally top with some more chocolate.
Bake for 10 minutes.
