Preparation time: 10 minutes
Cooking time: 15 minutes

Ingredients:

7 oz red beets, peeled and sliced

2 cups Greek yogurt, vanilla-flavored

2 tbsp agave nectar

1 tsp vanilla extract

¼ tsp cinnamon, ground

Preparation:

Place the sliced beets in a deep, heavy-bottomed pot. Add enough water to cover and bring it to a boil. Reduce the heat to medium and cook until fork tender. Drain in a large colander and cool to a room temperature.

Transfer to a blender along with other ingredients. Pulse until completely smooth and place in a plastic container. Freeze for 2 hours before serving.
