Easy Keto friendly Egg Roll in a Bowl

This Keto friendly egg roll has found it's way into my kitchen and for some healthy, 'yumish' reasons.

It is one of the favourite meals for those on a Ketogenic lifestyle. You'll also notice it is so popular in the paleo, whole 30 and low carb communities. Are you wondering why?

Well it's the same reason, I love it, and Im sure you mama will do as well.

This Keto friendly egg roll in a bowl aka “crack slaw” is 1.Super easy, 2. its quick to make and 3. It's the go to egg roll for the conscious eater as its got no 'funny' ingredient added go it, talk about healthy indulgence!

Prep time: 15 minutes
Cook time: 10-15 minutes
Serves: 6

Ingredients:

½ t. garlic powder
1¼ lb. spicy bulk pork sausage
1 T. rice vinegar
3 c. green cabbage, shredded
1 medium carrot, shredded
¼ c. water
2 T. toasted sesame oil
2 T. green onions, chopped
2 T. coconut aminos or tamari
½ T. fresh ginger, finely minced
Sea salt and black pepper, to taste

Optional garnish: 

1 T. toasted sesame seeds

Directions: 

1. Put your large high-sided skillet on a medium-high heat. Add the sausage and cook, then break the meat into small pieces as it cooks, for 5-6 minutes.

Once you notice the sausage is no longer pink, remove from heat and carefully drain any excess grease from pan.

Safety Tip: Clean off any excess fat that drips down the side of the pan before putting it back to burner.

2. Put the skillet back to heat. Add water, then scrape up brown bits from the bottom of the pan with a spatula.

Reduce heat to medium, add carrots, sesame oil, ginger, shredded cabbage, garlic powder and green onions.

Season with black pepper and salt, then cook, stir frequently, until the carrot softens and the cabbage wilts, approximately 4-5 minutes.

3. Add rice vinegar and coconut aminos, then stir to mix them together. Allow it to cook for another 1-2 minutes or until its heated all through.

Take off the heat and transfer to a serving bowl or platter. Feel free to sprinkle with toasted sesame seeds, if using, serve immediately. Enjoy!
